Do Dull Knives Brown Apples Faster?

One of the reasons to keep knives sharp is it damages the food you but less. This can lead to more of the food’s flavor and nutrients making it into your mouth. In this video we explore this with apples.
hello everyone Nate here with SimplySharp and today I’m going to test something that I read about which is um a sharp knife will go much more cleanly through an apple and therefore it does less damage to the cell walls within the apple and because there’s less damage the Apple will not brown as fast as quickly um so we’re going to test that we have an apple that we’re going to cut with a a knife that I’ve DED um and then an apple that with a with a sharp knife so um let’s just do this dull knife and this apple that is do there we go um wow that almost gouged out my board all right so there we go that is our dull apple and our Dull Knife Apple again I’m wiping this off because apples are acidic acid and metals react which will actually help D them faster even though that knife is already really dull all right so our sharp knife through the Apple all right I don’t really know how sharp of a cut that wound up being we’re going to do this just to let’s just uh see how scientific we can be here all right so let’s all right so here’s our doll guys our sharp knife guys and we are going to see what happens all right we’re back and it’s been um about 40 minutes since uh we cut these apples and uh we’ll zoom in here a little bit but you know I think that um there’s definitely a difference uh this is the dull knife this is the sharp knife see if we can kind of see that um you know I I would make the case that the this apple is definitely Browning more than the others let me uh let me see if I can get a better view of this all right here we go so the apples on the right were cut with a Dull Knife the apples on the left were cut with the sharp knife I mean actually me just kind of look at the edge almost looks like it’s blistering that’s the dull one versus the sharp knife the edges not quite as messed up it’s uh I mean I think that’s a pretty good depiction of it the both are both are Browning a little bit but one on the right is definitely Browning much quicker
