A sharpness tester that measures the force, in grams, needed to cut a fine test string. It turns a feel-based judgment into an actual number.
So, this is a device that um allows you to measure how sharp something is. Uh the idea is you’re going to try to cut this tiny little string in there. And this is essentially a scale that’s going to measure the amount of force in grams to cut that string. Um so, what we’re going to do is I’ve got the classic KitchenAid Santoku. We see quite a lot of these. Um, it’s obviously got a little surface rust on it and the edge shape is a little weird these days. So, we’ll try to fix that. But, we’re going to test this as is, see where it’s at, and then we’re going to sharpen it. Probably fix it up a little bit, too. Uh, and then see what we do. So, let’s see uh what some sort of official unit of measure says this thing came in at, and let’s see how sharp that we can get it. All right, let’s see where we’re at. g of pressure in order to cut that filament. So, I’m going to get to Work Sharpening and trying to uh fix up some of this weird geometry and uh see how we did. All right, we’re done. Uh fixed most of the issues with the knife. We are at 718 before. So, 122. All right. So, that was fun going from 778 to a 122. I think this knife is gonna feel and perform just a whole heck of a lot better. Um, but yeah, that’s uh that’s our new toy that we’re going to use to just kind of see what we can do, what kind of knives that we’re getting. Um, you know, for reference, what uh this handy little chart that comes with this device says is, you know, where we were when we first got the knife is what they call like a, you know, a moderately rolled edge, which is, you know, the edge of the knife is just kind of rolled over like this. Um, and you could kind of feel that all throughout there. Uh where we ended up is, you know, they say about 200 is in the range of a, you know, utility razor blade, like a box cutter. Uh then around 100 is uh you know, like a a double-sided razor that you would use uh in like a barber shop or like your, you know, the straightedge razors that uh maniacs shave with. Um but yeah, so there we go. That was a lot of fun.
