Mandolin blades sharpened using the platen on the older Ken Onion, which still clears the blade better than the newer machine does.
hello everyone Nate here with SimplySharp and today I’m going to sharpen some mandolin blades um I like to sharpen these using the platin back here um however on the new can onion I don’t know if you can see it but there’s a little Ridge right there um that uh kind of keeps me from going completely flush they do have this little clip you can put on it I run it without the clip because the leather belts don’t fit in there with it on so it’s another use case for the old one nice flat platten back there um I’m going to set this up for this guy to new um you know my grinding and then I’ll have the leather belt on here just to knock the Burr off and make it a nice St Ed so even though I love this guy uh documented some of my other concerns with it broadly getting over them but I still got a lot of love for the old guy
